Mini Caramel Cheesecakes

Credit for the recipe goes to Natashas Kitchen. Instead of using condensed milk as she suggested though, I used a total of 1 cup of heavy cream. These cheesecakes were surprisingly delicious. I always find that cheesecake can be very heavy, especially after a meal. I find this size to be perfect. The link can be found here.
